dinner tonite...
Feb. 14th, 2005 09:44 pmas I noted in: dinner tonite!, I was going to make dinner tonite. Ended up cooking for J and our mutual friend S. The salad, I wilted by heating up the dressing in the microwave, and tossing it with the spinach -- perfect, as it cooked the greens enough so they werent so raw, something I hate about spinach. I mixed the cheese, and tomatoe in afterwards, and let it sit while the rest of dinner was cooking. Mixed up perfectly! not too much dressing, and the organic tomatoes had a good flavour. Chopped fresh oregano added a great taste to each bite as well!
We ended up broiling the chicken as J's grill didnt have enough propane, but that was ok too, and the chicken came out tender and moist, and the veggies grilled up great. Good kalamata olives added to the taste, little bites of salty yumminess in the chicken.
I'll have to try it with onions, peppers and more fresh herbs. I think that baking in the foil really seals in the flavour well. I've got some parchment paper, and should try that next time too...
The fresh herbs were definately a _plus_. I'll have to buy some for my little garden and keep using 'em.
oh! and a good red wine to add with it. We're avoiding breads, but a good heavy artisan bread would not have been out of place here.
