what's for dinner tonite?
Well, I promised the P some mac and cheese, but its a more adult recipe using aged sharp cheddar...
mostly you make a roux of butter and flour, add milk and cheese and add that to the pasta -- I've bought some high fibre pasta from trader joe's to try for this -- its got about 1/2 the effective carbs of regular pasta, and tastes good al dente... cover with breadcrumbs and grated romano/parmesan cheese, and bake 'til richly browned and bubbling.

I was thinking of adding some bacon or meatballs into the baking mac and cheese to add some more protein and a different flavour, but I may just serve that on the side. There's something lovely about that deep sharp cheesy flavour!
(oh, definately a salad on the side with this. its really rich and yummy and makes P quite happy. He said he was dreaming about it, so I wanted to make it pretty close to the exact recipie for this time)
